No News

Sorry I haven't posted this week. Nothing new is going on...Just TONS of stuff for Titanic and I served on a jury for another trial this week.

I am hanging out with friends this weekend so I promise to make a better post next week.

Travels and Juries

This weekend, Tim and I went to Crockett to see both sides of my grandparents and also my dad for Father's Day. It was a nice weekend. Friday, we went to dinner with my Nanny and Papa (mom's parents) and my aunt, uncle, and cousins. On Saturday, Tim went with my Papa to his garden to get some vegetables and stuff while my Nanny and I went to town for a little while. Saturday night, we went to my aunt and uncle's house for dinner. They recently remodeled their house and it is beautiful! Sunday, we went over to my Mammaw and Pappaw's (dad's parents) for lunch and to visit with other family as well as my dad, Nancy, and the kids. It was nice seeing everyone and spending time with them.

Yesterday, I had to do voir dire (jury selection) for my class. It went well and I didn't get in trouble for anything :) It could've lasted a long time, but it ended up only being about 2 and a half hours. I know that sounds like a lot but we have four parties in the case, so that isn't too bad with that many parties. The rest of the week, we have a really easy time in class. Today, we just had a lady come and talk about trying to get a job in this economy (in my opinion, she wasn't very helpful - no offense to her or anything, it just wasn't). Tomorrow, we have another professor coming to lecture on something we were supposed to learn about last quarter but he wasn't able to come. We don't have class on Thursday and then on Friday we have the director of our Career Services Office (who used to be a lawyer) coming to talk about case cost-assessment. So, it will be a nice, relaxing week before I have to spend the weekend taking a practice Bar Exam and getting all the answers.

Only 14 class days left - EVER! Yay!

Snickerdoodle Cake

In case y'all are interested, here is the recipe for Snickerdoodle Cake, courtesy of Cake Doctor. It is yummy!

1 package (18.25 ounces) plain white cake mix
1 cup whole milk
8 tablespoons (1 stick) butter, melted
3 large eggs
1 teaspoon pure vanilla extract
2 teaspoons ground cinnamon
Cinnamon Buttercream Frosting (below)

1. Place a rack in the center of the oven and preheat to 350 degrees. Generously grease two 9-inch round cake pans with vegetable shortening (or Pam, whatever :)), then dust with flour. Shake out the excess flour and set pans aside.

2. Place cake mix, milk, melted butter, eggs, vanilla, and cinnamon in a large mixing bowl. Blend with an electric mixer on low speed for 1 minute. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase the mixer to medium and beat 2 minutes more, scraping the sides down again if needed. The batter should look well combined. Divide the batter between the prepared pans, smoothing it out with the rubber spatula. Place pans in the oven side by side.

3. Bake the cakes until they are golden brown and spring back when lightly pressed with your finger 27 to 29 minutes (more or less depending on your oven). Remove the pans from the oven and place them on wire racks to cool for 10 minutes. Run a dinner knife around the edge of each layer and invert each onto the rack, then invert them again onto another rack so that the cakes are right side up. Allow them to cool completely - about 30 minutes.

4. Prepare CInnamon Buttercream Frosting:

8 tablespoons (1 stick) butter, at room temperature
3 3/4 cups confectioners' (powdered) sugar, sifted
3 to 4 tablespoons of milk
1 teaspoon pure vanilla extract
1 teaspoon ground cinnamon

Place butter in large mixing bowl. Blend with an electric mixer on low speed until fluffy, about 30 seconds. Stop the machine and add confectioners' sugar, 3 tablespoons milk, vanilla and cinnamon. Blend with the mixer on low speed until the sugar is incorporated, about 1 minute. Increase the speed to medium and beat until light and fluffy, about 1 minute more. Blend in up to 1 tablespoon milk if the frosting seems too stiff

5. Place one cake layer, right side up, on a serving platter. Spread the top with frosting. Place the second layer, right side up, n top of the first layer and frost the top and sides of the cake with clean, smooth strokes.

It says you can place the cake in the refrigerator for 20 minutes until the frosting sets, but I've never done that.

Try it! It's easy and very good!

Another Fast Weekend

The weekends seem to go by SO fast. I hate it.

Friday, Tim and I went to the movie in Colleyville and saw Up with Nancy, Emily, Caroline, and two of their friends. We also ate dinner there. Up was good, but it was very sad. I spent the first 20 minutes of the movie just wanting to cry. Most of the funny parts were on the previews and there was a lot more sad stuff than I thought there would be.

Saturday, I went to BarBri in the morning and then we just hung out the rest of the day until we went to dinner at El Fenix in Addison with my friend Kaitlin, her boyfriend, and a friend of hers from college along with her boyfriend. After dinner, we went to The Flying Saucer. It is a place with a ton of different kinds of beer. Really laid back. It was fun to hang out with them.

Sunday, we went to church, worked out, and went by the pool for a little bit. Today it is back to school and work and bar classes. Only 21 days of class left! I can't wait to be done!

Yippee!!

I just got my final grade back from last quarter (PC II) and I passed!!!!!

Now, all that's left to pass is the class I am currently taking. I'm on the road to graduation on August 1, 2009!

*Cough*

Tim and I had a nice weekend - other than the fact I have a cough that shows up mostly at night. Needless to say, I haven't gotten much sleep since Friday and Tim and I have spent at least part of the night in separate beds on Saturday and Sunday :( I can tell it's breaking up, so I'm hoping the end is coming up soon.

Friday, we went to this thing called Beastro at the Fort Worth Zoo. A bunch of different area restaurants were there and you could taste their food that they brought. It was also open bar and Better Than Ezra played. I guess some people don't know who they are anymore - they are a band from the 90s (I think is when they were popular?) but they are releasing a new CD soon. They played a song from it and it was really good. The food at some of the places was okay and at other places it was awesome. We went with some of Tim's friends and had a great time.

Saturday, I went to bar class in the morning then we drove to Boerne to pick up my new car! We spent the night even though my mom and stepdad are out of town because we didn't want to do that long drive in one day. We went to eat at one of my favorite restaurants, called Fraelo's (spelling might be wrong!). It's a pizza place and you eat outside. It's soooooo good!

Sunday, we drove back and stopped in Waco to have lunch at Ninfa's with my dad, Nancy, and the kids. Then we went back to Fort Worth and went to the grocery store and just sat around. We were both tired from all the driving.

Today, it's back to school and hopefully on the very quick road to recovery from my cold! Hope everyone had a great weekend and has a wonderful week!

Weekend/Beginning of Week

Sorry I wasn't that much better of a blogger last week!

I spent last week going back and forth of course but I spent two nights in Waco. I was in the Top Gun trial tournament last week and got to the second round but then lost to a guy on the Mock Trial team.

Friday, Tim and I went to dinner at this place called Flips in Fort Worth. It was a bar-type atmosphere with a big porch area. We liked it. Saturday, I had to get up and go to BarBri (bar class) at 9:00 AM. I am going in Fort Worth on the weekends so I don't have to go back to Waco on Saturdays as well. Saturday night we went to a movie and dinner with Tim's friend Stephen and his girlfriend, Kelli. We saw Drag Me to Hell. It was pretty good but super disgusting. Then, we went to Gloria's and had drinks afterwards.

Sunday, we went to church and to a little get together in the church afterwards for new members and met some people. We just hung out the rest of the day on Sunday and I worked on stuff for Titanic. Yesterday, I didn't come to class because I had a doctor's appointment for the migraines I have been getting. He thinks they are probably hormonal but I am going to get an MRI just to be sure.

Now, it's back to school and BarBri for the rest of the week. On an exciting note, my mom bought me a car for graduation! I don't graduate until August but she found a really good deal on the type of car I wanted (a Ford Edge) and so she ended up going ahead and getting it. I haven't seen it in real life yet but she sent me pictures. I will post them tomorrow so I have something else to post this week! Tim and I are going to pick it up on Saturday.
